Cook a bag of frozen corn in the microwave with a couple tbs of water, strain and place corn in a bowl. In a food processor combine a can of chickpeas (rinsed and drained) black pepper, red pepper flakes, chili powder, garlic salt and garlic powder. Blend until you have a paste (this will be fairly dry and that's ok!) add chickpea mixture to the bowl of corn and add 1 whisked egg, and about 1/2 cup popcorn flour. Stir to combine, then form into patties and cook in coconut oil on a griddle!
Spring mix topped with avacado and salsa, with chunks of crab on the side. Also a side of apple pieces topped with cinnamon and chopped walnuts!
1 egg, 2 egg whites, spinach, tomatoes, chopped onions, red, yellow, and green peppers, garlic powder and a side of toasted Ezekiel bread!
Peel and thinly slice a large eggplant, place a layer of eggplant in a casserole dish and top with a layer of fresh spinach. In a bowl combine 1 can Italian stewed tomatoes, 1 whole egg and one egg white, 1 cup ff mozzarella, 1 jar of tomato basil heart healthy pasta sauce, 1/4 reduced fat grated Parmesan, fresh garlic minced, Italian seasoning, and a dash of garlic. Pour half of the mixture onto the spinach and eggplant layer. Continue to layer and bake at 450 for 30 mins, top with more cheese
Cook quinoa in bowling water until water is absorbed and quinoa is fluffy. Add Italian seasoning, fresh garlic, and a bit of garlic salt while the quinoa is cooking. When water is absorbed stir in balsamic vinegar and olive oil to taste. Layer in a jar with cooked peas, edamame, diced onion, chopped walnuts, hard boiled eggs, and raisins. Enjoy warm or cold!
